Ingredients
6 heaping cups fresh spinach leaves
1 heaping cup fresh chopped basil
A handful of fresh Tulsi leaves
3 tablespoons extra-virgin olive oil
1/4 cup pine nuts (or almonds chopped/sliced)
3-4 cloves garlic, minced
2 tablespoons red wine or balsamic vinegar
2 tablespoons lemon juice
1/2 teaspoon of Rock Salt and a generous grinding of fresh black pepper to taste
1/2 cup freshly grated Parmesan cheese
Method:
Wash and dry the spinach thoroughly. Tear apart the spinach leaves and toss together in a large salad bowl with the chopped basil.
Over low heat, lightly warm the oil in a
small skillet. Add the pine nuts (or chopped/sliced almonds) and
sauté 3-4 minutes until the nuts begin to brown slightly. Remove
from heat. Stir in the garlic.
Add vinegar and lemon juice just to warm through and season with salt and pepper to taste.
Toss the spinach and basil with desired amount
of the warm dressing. Sprinkle with freshly-grated Parmesan. Sprinkle
with fresh Tulsi leaves and serve immediately, with love!
