Chilled Summer Soup Recipe for 2 People

 

You and your family and friends will surely enjoy the taste and the health benefits from this simple and delicious Chilled Summer Soup. (For more people increase the amounts equally)

8 Medium Tomatoes
½ Small to medium Cucumber
2 Medium size Onion (chopped)
½ Cup Fresh Basil
1 Tablespoon Fresh Mint (chopped)
½ Capsicum
2 Tablespoons Fresh Coriander (chopped)
2 Tablespoon Lemon juice
1 Tablespoon Olive Oil
Rock Salt about ½ teaspoon or to your taste
A small piece of hot chili pepper to taste (optional)

Cut tomatoes in half, scoop out centre and put aside. Then put the remaining part of the tomato in the blender, and blend until it becomes smooth. Then strain it to remove seed and skin. Keep this tomato puree aside.

Put the rest of the ingredients in the blender along with olive oil, lemon juice, rock salt and if you like, the chilli pepper. Blend it well. Then add the tomato puree you set aside earlier, and blend it again to mix well.
Keep this mixture in a glass, ceramic or stainless steel bowl or serving pot and refrigerate for an hour or more.

Just before serving, remove soup from fridge and add -
½ Medium size Onion, chopped into small pieces.
½ Capsicum, chopped into small pieces.
½ Small to medium Cucumber, chopped into small pieces.
Fresh coriander cut up small.

Add and stir the vegetables into the soup, sprinkle the coriander leaves on top and serve. (Or you can put the soup into individual bowls before sprinkling the coriander leaves on top.)
