|2-3||Broccoli Florets, Chopped|
|1 Cup||Yellow Pepper|
|3||Spring Onions, Chopped|
|2||Garlic Cloves, Chopped|
|1 Tbsp||Ginger, grated|
|2-3 Tbsp||Sesame oil|
|360g||Tofu, Cooked or Cottage Cheese (Paneer) or Boiled Chicken|
|2-3||Cherry Tomatoes, Diced|
|1 Tbsp||Soya Sauce|
|2 Cups||Quinoa, Cooked|
|Salt & Pepper|
• First, prepare quinoa. Cook it just like rice. Take 1 cup of raw quinoa, add two cups of water and bring to a boil. Cook for about 15-20 minutes. You can add ½ tsp salt if desired. Midway, reduce heat to simmer; cover and cook until water is absorbed. Set aside.
• Stir-fry the broccoli, pepper, spring onions, garlic and grated ginger in sesame oil until tender, but with a bite.
• Add honey, followed by cooked quinoa.
• Add soya sauce, salt & pepper to taste. Mix well. Then, toss in tofu or chopped chicken and tomatoes; mix well.
