Delicious Quinoa Stir Fry Recipe

 Qty  Ingredients
 2-3  Broccoli Florets, Chopped
 1 Cup  Yellow Pepper
 3  Spring Onions, Chopped
 2  Garlic Cloves, Chopped
 1 Tbsp  Ginger, grated
 2-3 Tbsp  Sesame oil
 1 Tbsp   Honey
 360g   Tofu, Cooked or Cottage Cheese (Paneer) or Boiled Chicken
 2-3  Cherry Tomatoes, Diced
 1 Tbsp   Soya Sauce
 2 Cups   Quinoa, Cooked
    Salt & Pepper



• First, prepare quinoa. Cook it just like rice. Take 1 cup of raw quinoa, add two cups of water and bring to a boil. Cook for about 15-20  minutes. You can add ½ tsp salt if desired. Midway, reduce heat to simmer; cover and cook until water is absorbed. Set aside. 

• Stir-fry the broccoli, pepper, spring onions, garlic and grated ginger in sesame oil until tender, but with a bite.

• Add honey, followed by cooked quinoa.

• Add soya sauce, salt & pepper to taste. Mix well. Then, toss in tofu or chopped chicken and tomatoes; mix well.
